4-7-8

I have nights when I sleep beautifully, and other nights when I toss and I turn. Either I cannot sleep on one side, I get hot, or I have to pee multiple times. Some nights I toss and turn because Chris is snoring. I have to either deal, or pat him and ask him to roll over so I can actually go to sleep. Other times I ponder life, and eventually fall back asleep, or I get up and read and when my eyes can no longer handle it, I snuggle up next to my warm husband and fall back to sleep.

When I found a new way of approaching falling asleep, I thought why not try it? It actually works (from what I have found so far). It is the 4-7-8 principle outlined here:

“She happens to be a licensed wellness practitioner who studies meditation, stress, and breathing techniques, and told me it would change my life. You simply breathe in through your nose for four seconds, hold your breath for seven seconds, and exhale through your mouth for eight seconds. She explained that the studied combination of numbers has a chemical-like effect on our brains, and would slow my heart rate and soothe me right to sleep that night. “It works,” she told me. “It’s crazy.”

I have tried it a few times and since I do not remember what happened next, I think that means that I have fallen asleep. Breathe in for four seconds, hold for seven seconds, and exhale through mouth for eight seconds. When I do it I can physically feel a difference in my body. When you hold your breathe for seven seconds, and then exhale, your body has to go through a moment of relaxation. You would exhale out in a different way if you had not held your breath. While it feels a bit strange, I feel my body relax and release in ways it probably would not if I did not do: 4-7-8.

They are right that is slows your heart rate. It somehow slows my mind, which is just what I need to let go and let my mind and body relax and allow a few hours of sleep to get me to the next morning where it all starts over again. Random recipe: Five-Ingredient Chocolate Chip Cookies

On Sunday we caught up on a long list of items to do around the house. I went for a run, then we snuggled on the couch to fast forward through the Oscars. We paused our DVR to do laundry, and while I usually am the baker in this house, Chris decided to make these easy peasy cookies I found in a Martha Stewart magazine. They only have five ingredients:

Five Ingredient Chocolate Chip Cookies (from MarthaStewart.com)

Active Time: 10 min.
Total Time: 25 min.
Makes: 30

1 cup almond butter
1 cup semisweet chocolate chips
1/2 cup packed light-brown sugar
2 large eggs
1/2 teaspoon coarse salt

1. Preheat oven to 350 degrees. In a bowl, stir together almond butter, chocolate chips, sugar, eggs, and salt until a dough forms.
2. Place 1-tablespoon mounds of dough 1-inch apart on parchment-lined baking sheets. Bake cookies until puffed and tops are set, about 10 minutes.
3. Transfer to a wire rack; let cool. Cookies can be stored in an airtight container up to 3 days.

Easy peasy right? They were actually quite good. On the gooey side, but I love that they have no flour, contain almond butter, and the only thing that is really bad for you is the 1/2 cup of brown sugar. What is not to love? Plus they only make 30 (2.5 dozen) so that means you do not have to eat through a few dozen cookies.

Easy peasy.

On Mothering

I do not really think about the idea of feeling mothered too often. Until a few weeks ago. I met a woman who calmed me. It was not anything she really did, but I wondered if the vibe she gave off was one of a “mother.” Random I know. This woman is slightly irrelevant to this post as I may never see her again, but the hour I spent with her began a chain of events in my thoughts over the course of the next few days. Mothers. Mothering. Lack of a mom. My mom passed away 20 years ago. I have lived more of my life without my mom then I did with her.

Yes there have always been individuals in my life that have “mothered” me in different ways. I have tears in my eyes as I remember the ones that had a lasting effect on me. And, while many of those that mothered me are not deeply present in my life today, they are still in some ways always present with me. I saw how they mothered their own children, how they loved me, or how they taught me to love. It is interesting for me to look back over those 20 years of the diverse mothering in my life.

Jump to today. I am a bit of a hard-core person. I go all into a project. Usually it is hard for me to stop until I am done. You know you can count on me, trust me, and that I will not let you down. But with being hard-core there is an intensity that I exude that sometimes is well: intense. This woman a few weeks ago calmed me for that hour. I have no idea why. I have no idea if I would like her, or if she would continue to have that effect on me. It makes me wonder about all my friends, family, and co-workers who have lost parents, siblings, friends, co-workers in their life. How do they continue to feel fathered, mothered, taken care of? Why did this women calm me?

Is it that I need more mothering in my life? Do I need to let go a bit and allow myself to be mothered? I guess it depends on what our definition of mothering truly is. Sometimes I think it is knowing that I could pick up the phone and cry, share of my day, or ask for advice. Other times it is to tell me that everything is going to be okay, or to tell me how proud she is of me. Whatever the definition, I imagine a good amount of us could use a bit more mothering in our life.

Valentine’s Day Half Marathon

Last Saturday was a gorgeous day in Portland. It was sunny and nearly sixty degrees. While the other side of the country in New England was about to get another downpour of snow, there were folks in Portland wearing flip flops. I was not one of them, but inside I cannot wait for the day for my toes to spread wide and enjoy some warm sunshine. After a day of hopping around to a few of my favorite places in Portland, we came home so I could go for a run.

A little background — my treadmill died recently. Either I ran on it so much that I broke the main support bar, or Nordic Track just makes shitty treadmills. In any case, the only two options to fix it were to have a welder come out to our house, or for Nordic Track to replace the treadmill. Note to each of you that might be as crazy as I am, if you use a treadmill often, purchase the warranty. In October, we decided to extend the warranty. The treadmill fix it guy frequents our house a few times a year, and with the $150 a year warranty we do not pay for a single part or his time. If we had not paid the $150, we would have had to shell out the cash for a brand new treadmill.

So Saturday. Chris drops me off at home so I could go for a run, and he heads off to do a few more errands. I am in the middle of a really good book, and after hitting 8 miles, I feel great, Chris is not home yet, and I am loving the feel of my new treadmill. So I keep running. By mile 10, I am reminded that Sunday morning is a half marathon that I wanted to do in a neighboring town. I realize I never registered, and even if I had, I should be taking a chill day before a race. So since I have already run 10 miles I decide I might as well just keep going. Chris still is not home yet, and I still feel great, and I would love to finish my book.

Chris drives into the garage as I hit 11.5 miles, and cannot believe what I am doing. His happy, crazy wife. I finish my book at 12.5 miles and push through to 13.1 miles to complete a half marathon on my treadmill. Definitely easier than around the city, but still a good, solid workout. 1 hour 41 minutes is not too shabby.

Random recipe: Coconut Chicken Curry (Slow Cooker)

Some recipes work, others do not. Some become our favorites, and we make them over and over again. This recipe was in between. It was not my favorite, but since we all have different tastes I wanted to share. It was good, but a bit too strong in flavor for me. One day last week Chris was working from home and when I got home from work and opened the front door, there was the strongest of smells and flavors that shot right back to me. Mmm. It was soo good. The problem? The house smelled like that for days. This recipe was strong and pungent. What would I do differently if we made it again? I wanted more vegetables. The interesting part is that the recipe is full of vegetables all made into the recipe. I wanted to eat them with the sauce, chicken, and rice. Maybe I would add some broccoli or asparagus?

Slow Cooker: Coconut Chicken Curry

  • 2 pounds, 3-⅓ ounces, weight Boneless Skinless Chicken Breast, Cut Into Large Cubes
  • 1 whole Onion, Peeled And Halved
  • 2 cloves Garlic, Peeled
  • 1 whole Small Green Bell Pepper, Seeded And Quartered
  • 1 can (156ml Can) Tomato Paste
  • 1 can (about 400ml Can) Coconut Milk
  • 1-½ teaspoon Salt
  • 1 Tablespoon Curry Powder
  • 1 Tablespoon Garam Masala (Indian Spice Mix)
  • 2 whole Dry Red Chili Peppers (optional For Extra Heat)
  • 2 Tablespoons Water
  • 1-½ Tablespoon Cornstarch
  • 1 bunch Coriander (optional, For Decoration)

Instructions:

1. Place chicken cubes inside the slow cooker.

2. Place the rest of the ingredients (except chili peppers, cornstarch, water and coriander) in a food processor bowl and process together until the mix is smooth(ish). Pour sauce mix on top of the chicken, mix well, add hot peppers if using any, then close the lid. Cook on low for 6 hours.

3. An hour before serving, mix together water and cornstarch until the cornstarch is completely dissolved. Add to the chicken curry and mix well. Place the lid back on for the rest of the cooking time.

4. Serve on top of steaming white rice, like jasmine or basmati rice. Decorate with chopped coriander.
