First time ever. I completely missed posting a blog yesterday. Blame it on pregnancy brain. Alas. I do have a great recipe to share with you today. You can see I am continuing my pumpkin theme. I cannot get enough, and since pumpkin eventually gives away to peppermint and egg nog, well, you have to take advantage while fall is upon us. Can you believe that Costco already has their peppermint pretzels? It is not even Halloween yet and we can already purchase favorite treats for Christmas. Will we soon be able to purchase Christmas treats in July?
This recipe is a must try. It is, dare I said it? (Moist!) Yummy, and the perfect treat. Crunchy on the outside, soft on the inside. We actually had it for dinner last night with tomato soup. It is worth trying this fall.
Pumpkin Honey Beer Bread
2 cups sugar
1 cup canola oil
2/3 cup beer (at room temperature)
1/4 cup honey
4 large eggs
1 (15-oz.) can pumpkin
3 1/2 cups all-purpose flour
2 teaspoons table salt
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon pumpkin pie spice
Shortening (to grease pan)
1. Preheat oven to 350°. Beat first 4 ingredients at medium speed with electric mixer until well blended. Add eggs, 1 at a time, beating just until blended after each addition. Add pumpkin, and beat at low speed just until blended.
2. Whisk together flour and next 4 ingredients in a medium bowl until well blended. Add flour mixture to pumpkin mixture, and beat at low speed just until blended. Divide batter between 2 greased (with unsalted butter) and floured 9 x 5 loaf pans.
3. Bake at 350° for 55 minutes to 1 hour or until a knife inserted in center comes out clean. Cool bread in pans on a wire rack 10 minutes. Remove from pan, and cool until you’re ready to devour it!
I am not a fan of walking into a mall before Thanksgiving and seeing Christmas decorations or hearing Christmas music on the radio. You know the drill. One holiday at a time. I know each year they start earlier and earlier and this year, because Thanksgiving falls so late, it means there is a short three-week window between Thanksgiving and Christmas. So I am the LAST person to talk about Christmas before Thanksgiving. However…
…yes, I am breaking my own hardcore rules. I could not resist sharing some laughter and Christmas hilarity before Thanksgiving. About a year ago I wrote a blog on “Poo-pourri.” Well, I have a Christmas update for you. Father Christmas, Santa, whatever you call him. You grow up leaving him a plate of cookies and milk or egg nog. Over the years you start to wonder how does he get into my house if we have no chimney? How does he carry all those toys on his back on a sleigh and still be able to fly all over the world — that would be too many toys. Did you ever ask yourself if he ever made a pit stop that night? After all those milk and cookies did you ever think that he might have had to take a poo?
There are clever lines galore inside this three-minute masterpiece, not to mention all the sound effects and extremely clever lines like: “The ghost of Christmas ass; Gingerbread Manslaughter; I have been holding this since Dubai; So you can keep sneaking without reeking; Your dingleberries will smell like jingleberries.” I am still laughing…
My sister and a good friend just had babies in the last two months. It is fun watching (well I guess more through pictures at the moment) and thinking about Chris being a father someday. It has also prompted me to be reflective about my relationship with my own father. It was not really a rock-solid relationship. We had hard times, we had good times, but through it all we had memories. Here are a few remembrances of my dad:
If I knew I would lose him at such a young age, I would have kept all the letters he wrote to me on Christmas Eve (aka Santa who ate my cookies and drank the egg nog). Of course we left out egg nog for Santa, my dad LOVED his egg nog. The letters from Santa though, I guess I got rid of them, and they were the few letters I had from my dad. It would have been fun today to hear his wisdom. Especially during a holiday he loved. I am positive his letters probably shared his best self.
I wish he had been here long enough to meet Chris. He would have inadvertently taught him about construction. Chris would have picked up things quickly and learned to leave the truly professional jobs for the professionals.
He would have fun talking to Chris about cars. His “Automobile Quarterly” was a cherished possession. The two of them would geek out, although he would probably talk Chris’ head off with his endless stories of growing up on his Dad’s car lot.
The only movie I can remember seeing with him is, “Who Framed Roger Rabbit.” Seriously? What was he thinking? Bad movie, Dad.
His blue pickup truck was, well honestly, a piece of shit, but it was his truck and it contained all of his endless notes, crappy construction items, odd-shaped pencils, tape measures, clipboards, and what I will never forget, the device you could wire to the horn and play my favorite ever – the Dukes of Hazzard theme song. How cool I thought it was to have that blaring from the truck as we drove down the street.
I wish I knew I had a short time with him. I would have gotten over the grudge I held for so long. Not that it would have been easy for him, but I would have made us talk through our differences.
I do not remember it as much as a kid, but as I got older and saw him less and less, he seemed to show his emotion more and more. If only that had started earlier on in my life. If only.
He was a good/big hugger. Maybe that is where I get it from.
He had an addiction to Ritz crackers and peanut butter. I do not share this addiction. It just makes me think of sandpaper and glue. Dry and sticks to your mouth. Lime chips are where it is at! Wish I could spoil him with my addiction.
He would have loved iPhones. Not for the email, or phone, but for the games. If he knew you could play Cribbage, Euchre, Scrabble, Solitaire, I can imagine how unproductive he would have become. I think he would have played me from wherever he would be living.
