Have you ever thought about bread? I mean really thought about it? Before my pregnancy, I rarely ate bread. Occasionally we would have some at a restaurant, or at someone’s house, but generally speaking we did not have bread in the house. I have always (and still do) feel like bread is a filler food. I am one that believes that we should always fill our bodies with food that is fuel. Such as vegetables and fruit.
Until being pregnant. Now I cannot get enough bread. I have had a few cravings. Nothing too exciting. Chex-Mix, animal crackers, and for the entire pregnancy I have wanted bread. In the form of toast, sandwiches, and pizza. It is the only thing that ever sounds good. My OB said that my appetite would come back in the second trimester. It has not. Nothing ever sounds good. I never really am interested in eating. Except I know when I need to. When I start to get nausea (although I never had morning sickness) I know it is time for a snack or a meal. When that happens I only want bread.
It is comfort food. If you think about it, we have the option for bread in many different meals, breakfast, lunch, and dinner, in different cultures (roti, naan, flatbread, to name a few). Now we even have gluten-free. You can have it plain, or toppings galore. I remember as a young child when I did not feel well, or when I wanted a treat, my grandma would make me toast with sugar and cinnamon sprinkled on top. My dad loved peanut butter on his toast, my mom loved apple butter. At the moment, in the middle of this pregnancy, I want jelly. There have been times though when all I wanted on my toast was melted butter.
Now bread has become a phenomenon via the not so new culinary concept of “toast.” In San Francisco and New York you can find menu items such as buttered toast for $4. Yes. Maybe it is on high quality brioche, but still. I might sound like my grandma but I can almost get a loaf for that amount. In any case, bread, toast, what have you, it is my comfort food of choice as I ease into my third trimester.
I never used to enjoy eating my vegetables. They were always so gross to me. My mom usually purchased frozen or canned vegetables and then I truly think she pulverized them. Overcooked, often with added vinegar (um gross), and if lettuce at all it was usually iceberg. I do not blame her, maybe it was all she knew. I was that girl in college that basically ate cereal at every meal, or anything white (mashed potatoes, corn, pasta) — you get the point.
Yes, Chris changed my vegetable consuming life. Let me just say we rarely have frozen vegetables, and other than canned tomatoes for a potential recipe, I do not think we ever have canned vegetables. Fresh. Always fresh. We live in the perfect state to enjoy local farmers and their tasty bounty. I now crave vegetables, and make sure to have them during each meal of the day.
For at least the last five years I have consumed a green smoothie for breakfast. Usually it is this fruit version, or this chocolate yummy goodness. Lately though we’ve wanted to try new options to put in the rotation. Every version we have must contain spinach or kale. I think of it like having a salad for breakfast without having to masticate every piece. You do not even know you are drinking all the greenness. I found the original recipe on Averie Cooks, but have adapted it to my liking. The pomegranate juice adds a bit of tart in with the sweet blueberries. Oh, and for those of you that are grossed out by adding spinach, you cannot taste the spinach, but you get all the nutrients.
INGREDIENTS: 12 ounces frozen blueberries Large handful of spinach 1 med/large ripe banana 3/4 cup pomegranate juice (can also try blueberry, grape, cherry)
1 teaspoon vanilla extract
DIRECTIONS: 1. Combine all ingredients in an amazing blender (my personal favorite is my trusty Vita-Mix and blend until smooth and creamy.
2. Serve immediately.
Three things that are constants in my life on an almost daily basis are: exercise, vegetables, and writing. An odd amalgamation of things, but all critical for a bit of balance and inspiration in my life. You might wonder how these three have anything remotely in common. Their only commonality is that they ground me. On the days when I have the opportunity to run, eat a good amount of vegetables, and take the time to write, life just feels better. It may not mean that I have had an amazing day. Lots of shit could have happened, but these three stable aspects of my life help me to get through the shitty days and make the good days even better. Call me crazy, but it is true.
The ironic thing is that all three require discipline and none of them happened for me overnight. Consistent exercise was a gradual habit that happened over many years. My craving to run each day is the euphoria of pushing myself to the limits, having an hour that is just for myself, and the feeling at the end of a run when I am dripping in sweat and knowing I got through it. There is nothing else in my life that gives me that feeling and my day does not feel complete without my run.
How I feel when I run matters and, often, I can tell that if I feel horrible while running it has to do with some crap I ate earlier in the day. I am usually an evening/after work runner, so what I had for lunch and any snacks or junk food I ingest during the day matters. Which is why I have become a fanatic of eating vegetables. I have them in my green smoothie in the morning (usually spinach, kale, carrots), a salad for lunch, then for dinner, a vegetable, protein, and brown rice. Some sort of yummy concoction, but there is always a vegetable go with it. How far I have come from trying to get away with no vegetables as a kid and little to none in high school and college. Why have I become such an addict? I can now tell the difference in my body when I do not have these natural nutrients. More sugar + less vegetables and my body shuts down earlier in the day. More sugar = more exhausted. Since I know this about myself I do all I can to eat my veggies.
Writing. The final aspect to balance in my life. I write five blog posts each week and used to write in a journal too. My journal writing has waned in the past few months. It felt like work and I was not inspired to do it so I stopped. I know I will pick it up again, as that has been the ebb and flow of my life. There have been times when I needed to write, and write, and write to figure out my thoughts and unravel my world. Writing random olio keeps my mind open and aware. When you know that you are going to write a blog five days in a row you look at the world differently. It makes me more creative, have more wonder, and investigate the world.
What is not to love about my three life disciplines? A random olio of balance that is the core of who I am today.
